After beginning her hospitality career in Sydney at The Ritz Carlton Hotel in Double Bay, highly acclaimed chef Michelle Forbes has called Perth home for the last twelve years.
Michelle was part of the opening team that developed and ran The Trustee Bar and Bistro on St George's Terrace, part of the Brookfield Plaza precinct. The challenge of opening a new venue as an Executive Chef was extremely educational and embedded in Michelle the importance of having a respectful relationship with suppliers. It also provided a great foothold in the vibrant Perth hospitality scene.
With a passion for education, Michelle enjoys learning about new food trends and techniques and strives to have a close rapport with other culinary leaders.
Michelle is very proactive in contributing towards hospitality events and is a great believer in having a comprehensive understanding of farm to plate supplier relationships.
