Starting his apprenticeship in Noosa Heads 24 years ago, Guy has worked in some of WA’s most awarded restaurants, including Leeuwin Estate and Star Anise, but his desire to work in a restaurant that grows its own produce led him to Millbrook Winery in 2010. Guy grows his vegetables from seeds that have been saved from the previous year’s crop, cultivating the true paddock-to-plate philosophy.
Guy’s innovative menu changes frequently and is a constant reflection of what is abundant and at its best in the garden, guaranteeing the diner a truly unique experience. In 2017, Guy was named as Chef of the Year by the West Australian Good Food Guide; a thoroughly-deserved plaudit for the commitment and passion he brings to the Millbrook kitchen. A longstanding supporter of the Starlight Five Chefs Dinner, Guy looks forward to continuing to promote local produce and to making people think about where their food comes from.
