Alanna Sapwell is Head Chef at ARC Dining and Wine Bar, a modern glasshouse restaurant located at Brisbane’s thriving Howard Smith Wharves.
At ARC, Alanna has centred her philosophy around providing food that people feel great about. She places great emphasis on the use of ethically raised and sourced produce and supporting Australia’s farming industry.
Having made the decision to become a chef at the age of six, Alanna began her career as an apprentice at The River House in Noosa, where she learned the importance of using the best quality, local produce.
Upon completion of her apprenticeship Alanna has worked her way from Italy to Japan returning to Brisbane to work for renowned restaurants Urbane, GOMA and Gerard’s Bistro.
It was during this time that Alanna began her Drinks with Chefs initiative where hospitality professionals mentor one another. Her aim is to show that it shouldn’t be a quick climb to the top, and to give insight into the realism behind the success stories of the industry.
Alanna moved on to be Sous Chef at Saint Peter in Sydney, where she then worked her way up to Head Chef.
In her time at Saint Peter, the restaurant was not only awarded two hats, but also a place on Good Food 2017, Best New Restaurant Financial Review Awards 2018 and Alanna personally received the Time Out Hot Talent Award, Sydney 2017 and Appetite for Excellence runner-up 2017 (Australia-wide).
She has now returned to her home state to provide a fun, fresh and approachable dining experience in Arc’s incredible interior deigned dining room, with an extensive and contemporary wine list.
